Ecological semi-cured cheese from grazing Payoya goats, made with pasteurized milk according to the family recipe, vacuum packed, after two and a half months of maturation in conditions of high humidity and low temperature.
Very fresh, with light notes reminiscent of the barnyard and a predominant smell of butter
Firm, soft and very creamy flavoured with a very round light acid aftertaste, perfectly salted, fabulously rich on the palate thanks to its high fat content (50%)
