A great reserve cheese also called hard cheese, preserving the most traditional flavour. With more than 12 months of maturation, we can observe in it a hardness typical of the passing of the months and its loss of whey, as well as its intense aroma and flavour. It is carefully prepared, which allows a correct evolution of flavours and aromas, with natural rind, with mould blooming, which contributes to achieving the usual flavour and gives it its distinctive character, without artificial ingredients, which reminds us of cheeses that mature in cellars.
