Aged cheese or hard cheese, with a firm and compact paste that has small eyes, made from raw sheep's milk. Matured in the skin of Tempranillo grapes, from vineyards in our region and harvested by hand. Hard bark, brown in color with well marked and defined pleita. Persistent characteristic aromas and flavors on the palate.
A cheese with history, because there is not and will not be a better combination than a good cheese with a good wine, especially if they are from the same land. The best experience in a unique bite.
The Antigua Tempranillo is a paradise where the fermentation of the grape and the cheese come together, achieving a very buttery texture that almost melts in the mouth, we can even scrape it off with a knife like butter. The aroma is intense, with hints of alcohol, due to this double fermentation.
