The result of two years of testing, we get a fully balanced cured cheese with truffle flavour and aroma.
A firm and compact paste cheese; with hard brown bark and well marked and defined pleita. It has a buttery texture, soluble and somewhat sticky.
It is a cheese made with truffles from the Italian Piedmont.
Despite having tried truffles from other sources, the aroma and flavour were lost in the maturation process.
With the Italian truffle we have achieved the optimal result and the excellence that we were looking for.
It contains 100% natural truffle, all the ingredients that we add to our cheeses have to be as natural as the sheep's milk that we use to make them.
For this reason, we avoid truffle oils, concentrates or essences, which in the end hinder digestion and spoil the flavour of both products.
